People switching to Paleo diet find it pretty hard to give up on bread. To make the transition a little easier, you can try some Paleo bread recipe. The challenge is to find some feasible bread recipes that don’t contain grains and gluten. You have several options: flour made of nuts, combination of finely chopped vegetables and seeds and also small quantities of whole grain flour. You can make sweet versions of bread too, using dried fruits and nuts.
Here are some Paleo bread recipes. They are easy to make and they will provide you some variation in your daily menu. Also, they are great for the moments when you want to pack a snack for you.
Red peppers, olives and ham paleo bread
Ingredients: four eggs, three large red peppers, two red onions, a handful of green olives, dried tomatoes, 10 teaspoons of almond flour, 10 teaspoons of sesame seeds, 10 teaspoons of poppy seeds, a few slices of ham, olive oil, baking powder.
Chop all the vegetables and the ham in small, fine pieces. You can use a blender for that. Put some olive oil in a pan and heat it. Add all the vegetables and the ham inside the pan and allow them to soften a bit and to lose some of the juices. Start preheating the oven. Separate the egg whites from the egg yolks and beat the egg whites until they are firm. Add the almond flower to the egg whites and then incorporate the egg yolks, sesame and poppy seeds, the vegetables and meat composition and the baking powder. If the composition looks a little too wet, add some extra almond flour and seeds. Grease an oven pan with olive oil, pour the composition into the pan and stick it in the hot oven for about 50 minutes. Check with a toothpick to see if the bread is done, before removing it from the oven. Allow it to cool completely before cutting it into slices. Enjoy the paleo bread!
Sweet banana and walnuts paleo bread
Ingredients: six large eggs, two bananas, four handfuls of walnuts, two handfuls of dried fruits at your choice, baking powder.
Preheat the oven. Separate the egg whites from the egg yolks and beat the whites with a high power mixer, until they are firm and shiny. Mash the two bananas, grind the walnuts and chop the dried fruits with a blender. Start incorporating the egg yolks into the egg withes one by one, blending slowly. Add the walnuts flour one teaspoon a time, then the dried fruits. Incorporate the mashed bananas and the baking powder into the composition. Pout the composition into a large oven pan and cook it for about 40 or 50 minutes. Try to see if it’s done with a toothpick. When the bread is done, the toothpick remains clean after you take it from the bread. Leave it to cool completely before trying to cut it.
There are also other ingredients you can use to make bread. Spinach, for example, is a good substitute for grain flours.
